Ingredients
- 1 cup Foxtail Millet (Kangni)
- 2 tbsp oil or ghee
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1 onion, finely chopped
- 2 green chillies, slit
- 1 cup mixed vegetables (carrot, beans, peas)
- Salt to taste
- Fresh coriander to garnish
Instructions

Dry roast the foxtail millet for 2-3 minutes until a light aroma arises. Set aside.

Heat oil in a pan. Add mustard seeds and let them splutter.

Add urad dal and sauté until golden.

Add onion and green chillies, cook until onion turns translucent.

Add vegetables and cook for 3-4 minutes.

Add 2 cups of water and salt. Bring to a boil.

Add the roasted millet, stir well, and cover with a lid.

Cook on low flame for 8-10 minutes until all water is absorbed.

Garnish with fresh coriander and serve with coconut chutney.
