
Little Millet Pongal
Little Millet Pongal is a healthy South Indian breakfast made using Little Millet (Kutki / Samai) instead of regular rice. With a low glycemic index, this pongal is an excellent breakfast choice for diabetics and weight-watchers. The richness of ghee, pepper, and ginger makes it incredibly flavorful.

Ingredients
- 1 cup Little Millet (Samai)
- ¼ cup moong dal
- 2 tbsp ghee
- 1 tsp cumin seeds
- 1 tsp black pepper, coarsely crushed
- 1 inch ginger, finely chopped
- Curry leaves
- Cashews for garnish
- Salt to taste
Instructions

Dry roast moong dal until light golden. Add millet and roast for 2 more minutes.

Add 3 cups of water and pressure cook for 2 whistles.

For tempering, heat ghee, add cumin seeds, pepper, ginger, and curry leaves.

Add cashews and fry until golden.

Mix the tempering into the cooked millet and dal. Add salt.

Stir well to combine and serve hot with coconut chutney and sambar.
