Ingredients
- 1 cup Ragi (Finger Millet) flour
- 1 cup idli rice or parboiled rice
- ½ cup urad dal (split black lentils)
- Salt to taste
- Water as needed

Soak the idli rice and urad dal separately for 6-8 hours.

Grind the urad dal into a smooth, fluffy batter. Grind the rice coarsely.

Mix both batters together, add ragi flour, and blend well.

Add salt and allow to ferment overnight in a warm place (8-12 hours).

Grease the idli moulds and pour the batter.

Steam in an idli cooker for 10-12 minutes on medium heat.
